Testing Mini Pumpkin Butterscotch Muffins

In preparation for family being in town for Thanksgiving I thought I would try this recipe.
I got this recipe off allrecipes.com. I was going to make them for Thanksgiving morning, when the kitchen is busy and it is hard to get breakfast without too much disruption.

Mini Pumpkin Butterscotch Muffins. It had really good reviews, so I decided to give it a try. I followed the recipe to the letter, except I added a teaspoon of vanilla and I drizzled a little icing on the top.

I would post the recipe, but I was not impressed. I thought they were too dry and needed more spices. I did not overcook them and my spices were fresh. so I know that wasn't the problem. Monday, I am going to use the left over pumpkin, to adjust the recipe to see if I can make it so it is something that would be worth making and eating!

Don't get me wrong, they are edible. They should be more than that! For dessert tonight everyone had pecan pie I made instead of these.

They do look pretty on the plate though! Presentation is important, but taste first.

Fo real! I know you never mess up recipes, and when you do stray, it is always for the better. I am the first one to say there is not enough flavoring, so if you say it, it must be true!

You need to put your sausage wontons recipe up here.. oh! oh! or the pralein crunch (send me a thanksgiving batch!). Love and Junk!

They do look pretty! I'm disappointed they weren't very good! Does the recipe call for pumpkin? I would think that would make them moist. Maybe you could try yogurt?? I don't know, you're the expert! Love and junk (amber I'm copywriting this)!!!
